Chef Hung: Taiwanese Beef Noodle

Chef Hung is a Taiwanese noodle shop that originated in 2009 with their first store in Aberdeen Center (BC). They now have 5 locations in Vancouver, 5 in China, and 2 in USA. Their first Alberta location is in Edmonton on 81 Ave. Chef Hung himself is the mastermind behind this whole award-winning noodle shop around the world.

Disclaimer: I was invited to try Chef Hung Taiwanese Beef Noodle during their soft opening week. My meal was compensated but all thoughts and opinions are my own.

I’m sure most of you have already seen many reviews all over Instagram and other social media platforms so I’ll keep mine short and straight to the point.

champion beef shank noodle soup

We tried the champion beef shank noodle soup with a side of cold mixed baby cucumbers and an apple cider drink. The broth is bold and full-bodied with no added MSG. The noodles are made and shipped directly from Vancouver which were soft and chewy. The meat was rich and tender.

Cucumbers and kimchi were crisp and perfect palate cleansers.

You can choose between 4 types of noodles: thin, flat, vermicelli, and rice. We had the thin noodles for both soups for simplicity.

We also tried the champion beef brisket noodle soup with a side of golden kimchi and grass jelly drink. The broth was a lot more lighter than the beef shank noodle soup. I actually prefer this broth over the previous one. It’s made from beef bone marrow, root vegetables, and Chinese herbs, giving the soup a hint of sweetness.

Each of these bowls range between $12 – $17. I only wished there were more meat than noodles in the soups. It seems to be 90% noodles/broth and only 10% meat.

Chef Hung is a much needed addiction to Edmonton’s food scene – we don’t have many (if any) restaurants that specialize in Taiwanese noodles here. I’ll make my way back to try more of their noodle soups!
